Sauvignon Blanc

Bannockburn Sauvignon Blanc is primarily sourced from a 1996 planting on the eastern edge of the Winery Block, with a smaller contribution from a new planting in the Olive Tree Hill Vineyard.
One third of the fruit is destemmed and fermented on skins. Another third is whole bunch pressed to French oak. The remainder is whole bunch pressed to tank. The wine ferments to dryness on lees before blending and bottling.
Straw green, Bannockburn Sauvignon Blanc is taut with varietal fruit flavour and refreshing citrus acidity. Cellaring potential is four years.
